“Chia seeds are a great replacement for oatmeal,” said Murray, whose business centers on holistic nutrition and health coaching. “But by far my family’s favorite way to enjoy chia seeds is in vanilla ‘pudding.’”
Kim Murray’s Chia “Pudding”
¾ C. chia seeds
4 C. plain/unsweetened almond milk
2 tsp. vanilla
¼ tsp. salt
2 T. raw honey
1 tsp. cinnamon
Place all the ingredients in the Vitamix or food processor and blend up to a minute. Refrigerate one hour prior to serving.
